h2hotel's "green" philosophy plays out from roof to room, and I've worked hard to bring it to the wine list too. Each wine you see is doing something to contribute to true sustainability, be it carbon off-setting, a unique approach to worker compensation or encouraging biodiversity. Some are officially certified, but since certification is expensive, many are not. So how can I say that every bottle on the list is in some way "sustainable?" I rely on my "experiential database"... conversations, visits and good, old-fashioned relationships.

I like to say, if you're going to imbibe spirits, it's nice if it's made by a good spirit too.

Most of our wines are crafted locally, but carefully-selected imports bring diversity to the list. I love gauging where someone's palate is, and then offering options that take them somewhere they might not have gone. Our "wines on tap" program (specially designed using argon displacement to keep the wines fresh) even lets you taste before you buy.

And, to bring it full circle, having wines on tap prevents excess waste too. I go directly to the wineries to fill our barrels, which saves 24 corks, bottles and labels for each.
